Shepherd’s cheese with DO Idiazabal. Made with raw latxa sheep’s milk. Deserved of several gold medals at the World Cheese Awards.
The sheep from which these cheeses come are native breeds of Euskal Herria, with peculiar characteristics and bred in the same environment in which Basque shepherds and shepherds have bred these breeds historically, over more than eight thousand years. The grazing area, the climate and the techniques of the cheesemakers make this cheese unique and each piece unique.
Elaboration: Made with raw Latxa and / or Carranzana sheep’s milk, Idiazabal Designation of Origin cheese is considered a European Gastronomic Heritage. With at least two months of curing and 45% fat, it can be smoked or non-smoked.
Recommendations:Taste it with quince.
