It is a cylindrical cheese made from semi-hard raw cow’s milk, lubricated, with a very fine paste that melts slightly in the mouth.. It is not cut in the usual way, but fine carnations are scraped with a scraping tool such as the girolle or a similar utensil. Grating increases the surface of the cheese, which comes into contact with air. This causes a change in the structure of the cheese paste and therefore allows the full aromatic and melting taste to develop.
Recommendations: It goes very well with salads and canapés.
